Our Story
Glass House Lounge sits on one of Chicago's most storied corridors — South Halsted Street — where the rhythm of the neighborhood has always been measured in early mornings, warm ovens, and the kind of community that shows up and stays.
We started as a small dream between two walls: a passion for honest baking, real ingredients, and the belief that a great croissant or a perfectly crusted loaf can be the highlight of someone's day. That hasn't changed. Every morning, our ovens fire up before the neighborhood does.

The Craft
Good bread can't be hurried. We build our dough slowly — long cold ferments, hand-folded, baked in batches. Our pastries are laminated by hand, our coffee is pulled to order, and our seasonal menus shift with what Chicago gives us.
That means some days you'll find our famous brioche. Other days, it's a batch of cardamom buns or a rhubarb galette. We don't chase trends — we chase flavor, technique, and the kind of food that makes you come back tomorrow.
